Question for Dawn - peach tomato salsa

Dawn,
Hi, long time no see! We've used the Annie's salsa recipe to make four batches of salsa so far, and the tomatoes are still coming in so we'd like to try something just a little different. If I remember correctly you've added peaches to the recipe in the past. I did a forum search to see if I could find how you did it, but came up empty. Could you share that again? Or if I dreamed that up just let me know, lol! I need to do some catching up on the forum to see what everyone's up to. I see some of the "old" names and a lot of new ones.

    It has been a long time. It is so good to see you here.

    I'll Google and find the Harvest Forum thread with the Annie's Salsa Peach Twist recipe and link it below. I have better luck using Google and then searching for Garden Web plus whatever key words I want to use. The GW Search function is not always reliable.

    You didn't dream it up! It is real and it is tasty. I made it in 2012.

    I'm glad y'all are having a good tomato year.

    Thank you, you are wonderful!! That's going to be our next batch. Yes, this year has been a very good tomato year for us, and it looks like it may surpass 2012 which was great. Last year not so much. Thank you again, Dawn!

    When our big tomato deluge hit in June, I started getting panicky at a certain point because I couldn't even can them fast enough. It did remind me of 2012.

    I solved my own problem by processing the excess raw tomatoes and freezing them in gallon zip-locks in the amounts needed for various canning recipes. At one point I had about 20 gallon zip-locks full of tomatoes tucked away in the deep freeze, but putting all the excess ones there when I had too many to can in one day did let me keep up with the canning of the daily harvest without continually falling further and further behind. Then, I went back on days that were quieter and thawed out and processed a couple of bags a day of frozen tomatoes until I got all caught up. Now I have only 2 gallons still in the deep freeze. I might just save them to use in cooking in the winter time, and will add more bags of frozen tomatoes to the freezer in the coming weeks. We're still getting tomatoes, though not in huge numbers now, and I really think I've canned all the tomatoes I care to can this year.

    It is hard to complain about too many tomatoes, you know, and I do appreciate having so many. We had about 25-50 less tomato plants this year than in 2012--I planted two rows less, plus used wider spacing in between plants--but I have canned as many this year as I did that year, despite spending the whole year in drought and most of the summer in Exceptional Drought (we moved back to Severe two weeks ago and to Moderate last week, so I am pretty thrilled about that).

    The heat this week may sun-dry the tomatoes for us. Ha ha.

    I'm glad you and Larry are having a good garden year. Every year can't be great, but the great years sure do make up for the crummy ones.
