going professional

it seems my home made hot sauces have become popular enough that an investor wants to bankroll me going commercial with it.

I'm not gonna bother trying to advertise here, as most of you manage to create plenty of spicy deliciousness on your own. but I'm so excited that I figured I'd share the good news.

we don't quite have all the paperwork in order yet, but it's on the way.

I even have a half-assed website up and running.

CONGRATULATIONS! I'm really happy for you.

My friend and I have been trying to get her husband to do the same thing (my friends from Trinidad- he's even been in the food industry for years) but we just can't talk him into doing it too many rules and regulations. maybe we should have you talk to him. ;-)

That's awesome! I know you said you don't want to put it on here, but I'd personally be interested in the site. Shoot me a message, I'll have to check it out - and I'll definitely be trying one of you sauces! Congrats again!

apparently posting the website IS considered advertising. my post was deleted and I got an angry email.

in addition to posting the website, I had said something about that this would never have happened if it weren't for the stuff I learned here. my business was pretty much built on this site. I had said it more eloquently before, but now it's gone. but thank you guys for everything.

I am considering sending out samples to the first 20 people who respond to a post, or something like that. but don't quote me on that quite yet.

and jutsfl, I can't send you an email. feel free to send me one though.

Your label is important , selling T shirts is half the profit if you do it right.
Good Luck, lots of peppers to grow

Congratulations, judo_and_peppers! That's amazing and I am so jealous! So let me know if you need a good salsa recipe to go with the hot sauce! :)

I really wish you'd send me an email with the website. I won't think of it as advertising to me, but I will think of it as following the good news of someone who has been willing to support my curiosity about the superhots! You already have my address! And I really want a sample too! :)

That's awesome Jason, too bad you can't share your website here... Would certainly like to try the goodies.

Best of luck to you with the enterprise!

Are you going to have a copacker? You don't want the hassle (and the liability) of making this in your kitchen. Not sure what the laws are in FL - shoot me an email, I just went through FDA Better Process Control School for acidified foods, can give you some guidance. Congrats - I wish our state didn't make it so hard for small farmers to sell these products - I've almost decided it's not worth it...

the guy I'm going into business with has a commercial kitchen, he is financing buying commercial bottling equipment to expedite the process of making it. I do kinda wanna make it myself instead of going with a copacker. I'm somewhat of a perfectionist, and I think that attention to detail is part of what makes my sauces good. I know that at some point I might expand to where I have to pay others to make it for me, but I'll make sure to only hire other perfectionists. with that said, I'd still be happy to accept every bit of guidance I can get.

    Congrats!
Yes, make your own batch and refine it in your kitchen, taking excellent notes....then translate your recipe/s to the commercial operation and tinker until you find the flavor profile and texture that you're after.

Congrats on your success. Coundn't have happened to a nicer guy.

Great that he has a commercial kitchen, make sure you find out the laws for selling acidified foods in your state. If selling across state lines, you have to register your process with the FDA. I don't know if GW email is working - try to email me through that if it doesn't work I will post my email here.

Congrats and good luck, Judo. Might want to send some GW members some samples just to get some unbiased opinions. Sounds like quite an endeavor, but if somebody else is funding it, what do you got to lose?

    Jason -

It's so Wonderful to hear about you going professional. As Josh (Greeman28) suggested, once you have your recipes fine-tuned, translated for commercial cooking make sure to play with them until the large commercial volumes are how you want your sauces to taste, look, etc..... Don't settle for anything that you're not happy with.

Can't wait to follow your success and to try your sauces....

Ajsmama, I'm sure the email system is working fine, I just haven't gotten a chance to email you. as many of you who own a business know, it very quickly becomes a full time job. to say I bit off more than I can currently chew is an understatement.

I will most certainly contact you tonight.

my new headache is trying to scale ingredients up. I figured if I'm making double the amount, double the herbs. but recipes are coming out tasting bland. and they say if you're doubling a recipe, multiply the herbs and spices by 1.5, yet I seem to be finding the opposite is true. this is gonna be fun.
