Sorie, You try to walk a fine line between having the peat moss dry enough that the canna rhizomes don't get moldy or start rotting and yet having enough moisture that they don't shrivel up and die. So, I'd aim for moist peat moss but not soggy, wet peat moss. If you are storing them in bags, poke air holes in the bags for good air flow. This will help prevent mold or rot. Check them once every few weeks all winter long to make sure the peat moss is moist and not bone dry. When it feels too dry and you need to add moisture, I'd use a mister and spray the peat moss until it is moist. Peat moss is really tricky to re-wet once it totally and completely dries out, so you'll make it easier for yourself if you never let it get totally dry.

I don't have very good luck storing cannas inside so I leave them in the ground and after it gets cold you could put mulch over them. I think mulch too early would attract rodents which may eat them. Caladiums do not like the cold so I store them dry and some live. I don't put them in peat. I wouldn't say I have been successful with those either. I have successfully stored other tubers dry in plastic shoe boxes in the dark in my basement - four o clock roots and the ornamental yams if they make a tuber. I didn't use peat though.
