A linear glass mosaic tile would look nice. Comes in 12x12, ~$10-12/SF at Floor & Decor Outlet or HD. I see that you have under cabt lights. You will get some good highlight reflections if you go with a mosaic that mixes in glass with stone & tile sticks. Stay w/ a mosaic that contains some warm tone (brown,beige etc) tiles that will coordinate with your cabt colors, but has also some accent blues or reds.

What I think would look fantastic is a copper tin backsplash. It's quite reasonably priced to boot!

You need some color. This is very blah. How about a bright Spring, grass green.

I see a blend of country and contemporary elements in your space. I would obtain a large sample of textured copper backsplash and see how you feel about it. It could help to tie in with your trim and island.

I like the neutral color scheme - I've attached a couple of pics of our marble strip backsplash. We sealed it for a little sheen and to keep it stain free.

1. First thing: get rid of that light fixture. Fluorescent is not highlighting your new kitchen like you need it to. Replace it with something functional and beautiful. It will make all the difference in the world. THEN tackle the backsplash once you are able to see your kitchen more clearly.
2. Go with a white glass backsplash if you can - it can be expensive, but is beautiful, easy to clean, and is a style that will not be going away any time soon!
