What is the overwintering process?

With 30 newly planted (end of July) grocery store minis to take care of I'm hoping to get a head start on preparing the overwinter process. I'm removing all blooms as they bud this year to give the root system a helping hand. And when i planted them I added root stimulator to the hole. I dug big and deep and then back filled with home made compost. I watered and refilled until the the soil settled.

Now I'm wondering about the type of mulch I should buy. Would the shredded be better than the large bark? Or do i want something like my home made leaf mulch be better. i'm worried about weight since the branches are tiny and delicate at this stage? And what should I look for as season indicators that it is time to begin the overwinter process.
