Sit them on a plate and let them ripen.!!!

Well i would, even if there not ripe they still will have some heat in them.!! So you can use them for cooking if you dry them out or whole.

All my jalapeno's i have just now dont want to ripen..lol...Arggggg.........So i just cleaned them and whacked them into a jar of pickling vinegar green..Yum Yum.

Picked a couple shopping bags full of ripe chiles, just a little SW of Indianapolis (Over 10oz of dried Chimayo) almost month ago, Sept 27,28 weekend. A friend closer to South Bend just send some Anahiems, Jals and purple jals from her garden.

What are you doing to keep them from getting ripe ???

I agree, let them sit and see if any ripen. A habanero will still be screaming hot in the unripe stage. If they don't ripen you can through them in a jar of vinegar and let them sit that way (eventually you puree to make sauce) or you can freeze in a bag and use them later when you think of something you want to do with them.

I'd hang them up (like a ristra) and let them dry out.........Then I would put them in my coffee-bean grinder and make a hot chile powder with them.
