salvia maintenance???

Help! I have inherited many large salvia gregii plants. They are about 5 years old and quite woody on the inside of these 3-4' clumps. How hard can I cut them back for a good green growth flush this spring. Will they survive the winter if I cut back hard? Can I cut all the way back to the woody inside so that I won't have such unruley plants??
