S. patens -deadhead vs seed collection

Hello,

I'm growing these for the first time (thanks to the generosity of a GW member). I wasn't expecting them to bloom until late summer/fall, but they're blooming now. Maybe the miserable weather we had for a few weeks convinced them that fall was coming?

Anyways, will they bloom again? Will they bush out or only have one "spike"? I will try to keep the tubers over the winter, but I would like a few seeds too. If I let one flower-head stay to produce seeds, is that as bad as letting them all go to seed, for signalling the plant that it's completed it's cycle and shouldn't bother trying to bloom again?
