Wine making is one of my goals. Unfortunately, I don't think I will ever make enough fruit in my little GH here to make any wine.

Lots of people make wine around here, but usually it's blackberry, persimmon, raspberry. Obviously nothing tropical.

Did you start with a kit? What size containers are you using?

I bought a kit, I have about a 7 gallon primary, and two 5 gallon secondary containers. I'm going to get more containers to be able to make various size batches for smaller experiments. Those flavors which people around your parts are using sound great. I'm anticipating peaches, plums, surinam cherries, figs, pineapple, maybe bananas, and eventually mangos, mulberries, persimmons, anything else which comes in great quantity at one time. If you supply your own fruit, its dirt cheap to make your own wine, and you can make it as sweet or dry as you wish. Very fun!

Joe Real on GW's fruit and orchard section (and citrus.forumup.com) makes lots of different wines including tropical, maybe drop him a line. I'm more of a beer maker, but have made lambic style ales with pomegranites, elderberries, other ales with pumpkins, cherries, or apricots added.
