training grapes

I have several muscadines that I let grow sort of wild on trellises as a privacy hedge for my patio. I planted one this summer and trained it on wire ~20' long like you would see in a vineyard.

My question(s) are:

I read that muscadines LIKE to be severely pruned. How? to the beginning stump and let them grow along the wire again? Or to you trim them somewhere along the wire?

What are some methods of getting maximum fruit production?

I'm guessing by those that I have that just water and fertilizer are sufficient for growth but not fruit.
