I did the same as you--picked all the green lemon boys at the end of the season, which for us was just a couple of weeks ago. Some had already started ripening on the vine, and others are beginning to ripen now, but there is no trace of the pink blush that you mention.

Lemon Boy is a fine hybrid tomato and I grow them most every year. I've never picked LB greenies at the end of a year and
then ripened them in house so I'm not sure what is the source of the pink blush on the bottom of your tomatoes. I have picked pink, red, and yellow varieties of big beefsteaks at years end and then tried to ripen them. Don't remember a pink blush, but it might have been there. Most such attempts on my part ended with rotten tomatoes, but I have gotten a few that were ok. But none were ever very tasty.

I pretty much have settled on whole canned tomatoes in pint jars for my winter tomatoes. They taste darn good though, surely, they are a bit soft compared to fresh fruit. We did a jar in last night and everyone enjoyed them . I pick and can smaller fruits from plants like Kada or Early Cascade.
Kada is extra firm, even after cannning it still is fairly solid. Unfortunately they are not so desirable when fresh picked so one plant is generally enough.
