Bundt Pumpkin Cake

I found this while browsing - I thought it was very clever.

I think you can get around 12 slices from a Bundt cake - this is an easy way to get 24!

I read where one woman said she had mini-Bundt pans for smaller versions.

You could also frost the whole thing.

Jim

Directions:

1. Bake a bundt cake and then bake another in the same pan (unless you have two identical pans, bake both at the same time). Make sure to spray pan with non-stick baking spray. I like BakerÂs Joy with flour.

2. Make sure bottom sides are flat; you may need to cut them down.

3. When cakes are cool, frost flat sides together in the middle with a butter cream like frosting. Stuff the center with the same frosting used to frost the two cakes together.

4. Insert a real pumpkin stem into the center hole stuffed with frosting.

5. Glaze the pumpkin on the outside and youÂre done!

Note: Cake recipe for this cake was the DevilÂs Food cake recipe on the back of the Soft Silk Cake Flour box. Box-type cake mixes can also be used. The glaze recipe came from the Betty Crocker Cook Book.

How clever that is, I would never have thought to stack two together! It makes a good pumpkin! Luvs

That's a great idea! Think I'll made one this weekend for when company comes.

Yummmmm, and so cute and easy, great idea, thanks Jim!

Right up my alley! I just bought the mini pumpkin pans.
    Thanks, Jim...

I made these a couple of years ago and the last year I found some small bundt pans to make some... I made it with my pumpkin bread recipe.... the kids loved them! for the big cakes...I drizzled orange colored butter cream icing and used a icecream cones for the stem... dipped them in green icing... I also cut out leaves with my cookie cutters using green fruit roll ups... I wish I took a pic of them... but they didn't last enough to take one...lol..

I saw a recipe for the smaller version in the Sept/Oct issue of Southern Lady magazine and bought the magazine so I could make them. They use a pumpkin recipe, cinnamon sticks for the stem, and drizzle Orange Cream Cheese Icing over it.
My daughter was with me and kept saying "No Mom, you can't buy another magazine" until I showed her the recipe. The deal was-I can buy the magazine IF I make the pumpkins for her!
I inherited about 2000 magazines from my sister, plus all of the magazines I've bought over the years, as well as all of my subscriptions. Thats why she was trying to keep me from buying another one! But, the pumpkins won her over!

Betty you must have had so much fun going through all your sister's magazines! I love to do that, I have kept lots of my old craft mags and at least once a year or more I pull some out and look through them.

Missy, what a great idea to use the fruit rollups for leaves. I'll have to remember that idea.

Thank you, Jim. That is such a neat idea and looks yummy.
Are you competing with Kathleen now for Fattening Fotos?
    LOL

Notice the ends have a place to pur a little batter to make leaves as well as those IN the pan..

kathleen, where did you find that pan? I need one! I'm attempting to make the pumpkin cake with my bundt pans right now...we'll see if I can make it pretty enough to put in on the menu for our Halloween party--if not, it'll be a delicious experiment for us tonight!

LOL, Fairytale, you NEED it?? It is a Wilton Dimension pan, so you can google it. I got mine at ACMoore for 20.00..Michaels carries Wilton as does Joanns. I don't know where you are from, so I don't know what stores you have.
But since it is a Wilton Pan, you should be able to find it.
When I make them I will post a pic. I will put them on my Lenox Pumpkin cake stand so we are staying on topic!! LOL
Karen is the food police lady here!! :)

    And welcome...stick around and post!

Whoa....I just caught that part about me being the Food Police. LOL. I'm not the only one here who thinks your food fotos are fattening, Mz Kathleen. You're just darn lucky none of us live near you, or we'd be there constantly begging for leftovers and hand-outs (if not formal dinner invitations!). So we just sit here and inhale invisible calories and drool on our keyboards. How sad. LOL

OK, just vegetable pics from now on!!

"OK, just vegetable pics from now on!! "

Potato chips, onion rings, french fries, broccoli in cheese sauce, scalloped potatoes, fried eggplant, sauteed mushrooms, baked potatoes w/butter & sour cream.... ;)

    LOL

You guys are so funny--have me sitting here all by myself chuckling out loud. Hey Kathleen, save me some of those "vegetables" too. Luvs

LOL, Jim, I was thinking along the same lines!!

Luvs, here's a portion for you!
Vegetables...eggplant parm..only the cheese is not a veggie, but dairy, and that is good for your bones, LOL..

Y'all are too funny!!! I am LOL!

Jim, you are a guy who knows his veggies!

Kathleen, you are enjoying the torture aren't you?
LOL Instead of your crown as the Kitchen Queen, I'm going to buy you a pointy hat and broom...you can still keep your rolling pin.

Thank you, Karen, I like black...it is slimming..can you change that dress to black??

Oh my gosh, that is one of my all time favorite "veggies" and I haven't had any for a long time. Now you have ME drooling on my keyboard instead of Karen--thanks allot, Kathleen. ;o( Luvs

    Anything for you, Kathleen. LOL

Hey that's great!!! See how much slimmer I look!
How do you do that??...bewitching powers, Karen, LOL!!!

Luvs, dh makes the eggplant. slices it very thin, fries, drains thoroughly so it is not greasy. It cuts into squares and sits on the plate beautifully! Wish I could send you some..a labor of love, I leave to him!!! ;)

    kathleen,

Thanks for the welcome! I've been calling all over town for that Wilton pan with the pumpkin molds. You laughed at my "NEED" for it...I'm a little pumpkin/fall/halloween obsessed.

I'll try to post some pictures soon--wish me luck on finding the pan!

Fairytale, if you can't find it locally, here's one online tho it's $30.

There are also some on eBay for a Buy It Now price.
Around $22 plus the $10 shipping. All the ones I saw online were running $30 plus shipping, so ebay has the better deals. And these are NEW pans of course. I saw a couple of sellers with them but prices all about the same as the one I've linked to.

Thanks, Jim, for a marvelous idea! And here I was proud of myself for making pumpkin muffins to bring to a funeral luncheon yesterday. I was actually "test driving" a pumpkin bread recipe I got on line that I'm planning to make for Thanksgiving. They turned out well. It may have helped that I used my new silicone muffin "tin". (First try with silicone.) But your creation takes the cake!

Thanks Jim! What a great idea! It made me drool! LOVE that it is chocolate too!

Karen, that's the pan I posted above, I paid 19.99 at Ac Moore.

I LOVE chocolate and I LOVE YOUR CAKE!!!! Very clever!
