Teflon? You're talking about the trays it comes with? They're enamel, not teflon. You might be able to make something else work, but the way the oven is designed you really should use the trays that come with it. Check with GE to be sure, but it seems like ordinary enamel to me, and as far as I know, enamel is pretty much inert.

You don't have to put the food right on the trays, though you can. You can use any type of appropriate cookware. That is, you can use stoneware, glass or corning in microwave or speedcook mode, and you can use any of those, or plain metal, in convection mode.

Do you have a 120 or 240? The manual for the 120 reads that the metal tray is non-stick, while the 240 does not make mention of this.

I have the 240, so before I responded to you I read through the manual on a 120 and didn't find that. The thing about enamel is that it is non-stick...just not teflon. It's just really slick.

Do check at your appliance store or GE customer service, but I've never heard of them using teflon or anything like it.
