Personally, I prefer single because it is bigger and you can fit pots and pans for washing. I have a double at my country house and I find it not practical at all.

Single, preferably under-mounted with a tall faucet.

Have you considered a "1-1/2" sink? Provides a large, deep main sink, and a side sink for the garbage disposal. Keeps the messy bits all contained in a utility area, leaving the main sink for washing and cook prep.

I think the decision must be made by how YOU use your kitchen. If you bake cookies, 13x9 casseroles, turkey or ham, make kettles of soup, or pots of pasta, then you need a single sink so your dishes will fit. You can always put two dishpans in the sink whenever you need two sections.

I have a double, sort of. It's quite large for pots and pans, but the left side is small, and more shallow. I love it because the right size is large enough, and the small sink side is where I drop food for disposal and also use the small sink side to fill with PineSol water. or oil soap, etc. I just saw the above sample. My sink is a rectangle and can still fit cookie sheets in the big side.

I personally prefer large single bowls, and use those on the majority of my projects. To be honest the only clients I have who actually insist on having a double bowl tend to be elderly, as they've always had that arrangement and don't want to change! (And I wouldn't want to mess with that! :o) The majority of my clients however *really* dislike double bowls of any configuration because they cannot fit very large items inside them.

If space and budget allow, a large single bowl and a separate prep sink would be perfect imo.
