I am knitting scarves and matching gloves for a few people. The scarves are made with just the 'knit' stitch and for the gloves I bought those ready made knit ones and added a border with matching yarn. You can use any kind/color you want but I am doing them in the feather/eye-lash stuff. Very nice on the price also as I bought the yarn and gloves at our Dollar Store. So each set is about $4.00!

Washcloths/washmitts are quick and easy to make. Put a nice soap with it - instant gift! I know LionBrand has patterns; just do a Google search, you'll find TONS!

I second the washcloth/dishcloth idea. They are quick to knit up and you can usually get Sugar & Cream or similar yarn for super cheap. Plus you can make each one unique by practicing new stitch techniques or changing colors or what have you.
