Pasta machine...KAW...

It is raining and cold today so DH and I called some friends and invited them for homemade pasta. DH has perfected the whole process and I thought I would share. He uses semolina which is the key to a pasta that is very easy to work with. He makes the dough in the Cuisinart and then lets it rest on the soapstone counter under a bowl for several hours. Then he uses our pasta roller to knead it...6x through on 1/2/3 and then he cuts it on 3 for fettucini. It goes into a bowl of dry semolina and is tossed to insure it doesn't stick together. We don't dry our pasta as we have found that it is best to cook w/in 2 hrs or so of cutting. Here are the four pics showing the process. If you would like the recipe let me know. Mange !!

Trailrunner...I would love the recipe, please. That looks delicious, and I just dusted my mother's old pasta maker off. I promised my girls that we would make homemade pasta soon. Thanks for the timely post!

Looks like fun.. Please share the recipe. Many years ago, my uncle was cleaning out my grandmother's kitchen and found a pasta machine. No one wanted it so i took it. I haver NEVER used it and I am hoping that when we moved 90% of our stuff to storage that made it into the storage box. i completely forgot about it until now..

It's always fun to turn a rainy night into a fun night.

Here is the receipt...as my grandmother used to say...

In the food processor put 1 c semolina, 1/2c AP flour,1/2t salt.2 large eggs,2 T olive oil,2T water. Process till a smooth ball..comes together. Take out and place in a closed plastic bag or under a bowl for a couple hours till ready to roll out.

When ready to roll out....put through the rollers 6x on each setting...we have 1/2/3/4/5 and cut on 5 at fettucine. Toss as you cut it with more semolina in a bowl and remove and place on a cookie sheet. Cover loosely with plastic till ready to cook. When ready bring lots of very salted water to boil and add pasta...cook approx 2 min...NO LONGER....taste to be sure it is "to the bite".

Drain over your pasta bowl and have your hot cooking pot sitting waiting. Dump the hot drained pasta back in the hot pot and add several ladles of sauce on top and toss...cover pot and then dump out the boiling water from your pasta bowl and pour in the pasta and sauce and add the extra sauce and meatballs...this will make sure that all is HOT when served. Have lots of parmesan cheese and wine and bread at the table....YUM !! If you want the sauce recipe just ask....:) if you want me and DH to come and do this at your house....just ask ::)) c

Someone is being VERY fresh...like the pasta !! Hey miss cat mom ...

gilly...I hope so too ! Please let me know and post pics when you are moved in and cookin'.

mom23, you and your girls will love this recipe. Notice how clean the area is around the pasta maker and the pasta. That is due to not using flour...makes a much better product and the water for the pasta is much cleaner thus the pasta is not sticky...all around it is just a more satisfactory experience and tastes wonderful. Please post pics of you and the kids making pasta. c
