Lighting layout help please!

So, now that I've got floors, cabinets and appliances chosen/ordered, I'm starting to obsess about other kitchen details - and lighting is at the top of the list. I am planning to use recessed cans with 2 mini-pendants over my counter seating area - pretty simple, I thought. That was before I started looking for the can lights. I had NO idea that there were so many different choices in size and style. Anyway, here is a top down view of my kitchen (disregard the colors):

The kitchen is 14' long by 7' wide. The current lighting consists of light from the window and a fixture in the center of the room that has 3-60 watt bulbs in it - it's plenty bright, but obviously there are shadows everywhere. The seating area is in the lower left corner of the pic, where there are no upper cabinets. That area is actually 48" long with 18" deep counters, so I was planning to hang two mini-pendants around 10" from the wall, trisecting that area evenly (16" apart). For the cans, I was thinking of 2 rows of 3 lights, 18" away from the walls. I hadn't decided on exact spacing, but I figured that trisecting the 10 feet of the kitchen that has cabinets would work (ie, no cans in the seating area or over the fridge). See pic below, and forgive my inaccurate chicken scratch:

The kitchen gets a decent amount of light from the window, but I've purchased cabinets with a chocolate stain, so it's going to be somewhat dark in there. The granite is a light color and I will have undercabinet lights in addition to the cans and pendants. However, now that I've seen all the can sizes available, I'm thinking I might be able to use just four cans, if I use the 6" size with a higher wattage bulb. Of course, I am just guessing at all of this, so if you experts would like to weigh in I would greatly appreciate it! Thank you!
