I'm not sure about the removal, but as far a s other aspects of your problem...

Some of the drop in sinks are really nice, so don't worry about being able to find one that isn't ugly. Still harder to clean though, and more likely to get chipped by your DH with the exposed rims.

Are you sure the granite will hold up?

Little chips can be repaired--not perfectly, but OK.

Have you considered a more resilient material for a sink, like Silgranite or plastic I mean Corian/Swanstone?

Thanks for the response Fori, I'm hoping the granite will hold up...at least there's a better chance in the bathroom than the kitchen. Funny you mentioned Silgranit or plastic as I saw an acrylic sink offered...have Silgranit in the kitchen and love it, never thought about it for the master. I'll have to check that out.

Replacing a broken sink with the same model sink isn't that big a deal to a good granite fabricator with plenty of experience and who mounts it right the first time. I've had it done before for clients. Just don't pick Bubba's Discount Granite and Used Tire Store to fabricate your granite and everything should be fine. ;)
