I have a snack bar and I put two lights over it, as long as you place the lights directly in the middle I don't see Why that wouldn't work, I use those lights more then anything, except when in kitchen cooking. I also have canned lights in my kitchen this all works well together. Good luck, I figure you can never have too many lights, you don't have to turn them all on at the same time.

I agree with pebbleslew. I have canned lights (recessed) and and Island pendant over one bar and 2 single pendants over the other. It works great. Sometimes you are just working over the sink or just one area of the bar and you don't want to light up the whole kitchen. I also recommend putting dimmers on them. Here are some pics.
