Now I'm curious. :) hope it's ok to ask: what's "northern" or "southern" style corn bread?

One's with sugar and flour and baking powder.....and the other is mainly corn meal and water....
But southerners will defend their strange way of making it....

Scroll down this link to see a Sausage Cornbread recipe that has jalapeno peppers in it. You didn't say if the cornbread was really moist, more dry, or had corn kernels in it. Maybe what you are looking for is something like this recipe?

Thanks for the recipe, Teresa. This sounds like it could be close. I ate this in Oregon, so would guess it's a northern recipe. I have a really good recipe that uses cake flour and egg whites are beaten separately, but doesn't work too well when I try to add sausage and hot peppers. The sausage kind of lays on the bottem and makes a layer.
