RECIPE: Looking for: Tamale Pie or Casserole

Hi all,

As a newbie here (spend most days researching kitchen forum since we are starting a remodel), I already searched for this with not much result. I would love something that someone has tried and loved but that is (of course) easy to make! :)

I know I saw a recipe a few years ago but can't locate it anywhere. It was a few simple ingredients using ground beef, corn meal (or masa maybe) and the other usual key tamale ingredients.

    This recipe comes from my 40+ year old Better Homes and Gardens New Cook Book which is in very delicate condition now from having used it so much. I am copying it exactly as it is written. I have eaten this when my mother used to make it and I have made it, also, but it has been years. I didn't do much cooking during a certain period of my life, so this dropped off the radar screen. It is a good recipe as I remember it. I think I will have to try it, also.

    TAMALE PIE

    1 cup chopped onion
    1 cup choppped green pepper
    3/4 pound ground beef
    2 8-ounce cans (2 cups) seasoned tomato sauce
    1 12-ounce can (1 1/2 cups) whole kernel corn, drained
    1 cup chopped ripe olives
    1 clove garlic, minced
    1 tablespoon sugar
    1 teaspoon salt
    2 to 3 teaspoons chili powder
    Dash pepper
    1 1/2 cups shredded sharp process American cheese

    CORN MEAL TOPPER:
    3/4 cup yellow corn meal
    1/2 teaspoon salt
    2 cups cold water
    1 tablespoon butter or margarine

    OVEN @ 375 degrees

    Cook onion and green pepper in a little hot fat till just tender. Add meat: brown lightly. Add next 8 ingredients. Simmer 20 to 25 minutes, until thick. Add cheese; stir till
    melted. Pour into greased 10 x x 1 1/2-inch baking dish.

    Make corn meal topper: Stir corn meal and salt into cold water. Cook and stir till thick. Add butter; mix well. Spoon over hot meat mixture in 3 lengthwise strips.

    Bake casserole in moderate oven (375 deg) about 40 minutes. Makes 6 servings.

    I haven't made this but it's from the American Century cookbook & sounds really good:
    TAMALE PIE (serves 6)
    Cornmeal Crust:
    4 cups water
    3/4 tsp salt
    1 1/2 cups cornmeal
    2 TBL butter or lard (not shortening)

    Filling:
    2 TBL bacon drippings or vegetable oil
    1 medium yellow onion, peeled & chopped
    1 small green bell pepepr, cored, seeded, chopped
    1 1/4 lbs lean ground chuck
    1 TBL chili powder
    1/2 tsp ground cumin
    1 cup canned crushed tomatoes (I'd use Ro-Tel)
    1/2 cup beef broth
    3/4 tsp salt or to taste

    For the crust: Preheat oven to 350°. Grease 2 1/2 qt casserole; set aside.
    Bring water & salt to boiling in a medium heavy saucepan over high heat. Whisking vigorously, add cormeal gradually & continue beating until thick & smooth; beat in butter. Spoon 3/4 of mixture into casserole & with spoon, press over bottom & up the sides. Set aside. Keep remaining cornmeal mixture covered until ready to use.
    FILLING: Heat drippings in large heavy skillet over moderate heat 1 minute, add onion, green pepper & garlic & stir-fry until limp, about 5 minutes. Add beef, chili powder & cumin & cook, breaking up lumps until meat is no longer pink, about 5 minutes. Add tomatoes, broth & salt & cook & stir 5 minutes. Taste for salt & adjust as needed.
    Spoon meat mixture into cornmeal "crust" & cover with remaining cornmeal mush.
    Bake uncovered until browned & bubbly, 30-35 minutes.~~

    I am looking for the Tamalee pie recipe my mom made for my brothers in the 1949s. It is different than any I have found. I believe everything was mixed together and not layered with a corn bread topping. Anyone as old as I am and from California might remember this recipe.

    CROCKPOT CALIFORNIA TAMALE PIE

    Ingredients:

    3/4 cup yellow cornmeal

    1-1/2 cups milk

    1 egg

    1 lb. ground beef (browned)

    1 (1-1/4 oz.) package chili seasoning mix

    1 can chopped tomatoes (15-1/2 oz.)

    1/4 cup diced onion

    1 teaspoon seasoned salt

    1 can corn, drained (15-1/2 oz.)

    2-1/4 oz. black olives

    1 cup cheddar cheese, shredded


    Directions:

    Mix cornmeal, milk and egg.

    Add browned ground beef, tomatoes, onion, chili mix, seasoned salt, corn & olives.

    Pour into crockpot.

    Cook on high for 3-4 hours.

    Sprinkle cheese on top.

    Cook 5 minutes longer.

    Serve.
