LOOKING for: leftover pork tenderloin roast

i made a pork tenderloin roast on the bbq the other day.

have leftover's and don't quite know what to make for dinner with it.

any ideas for me?

Ps. my husband was in a motorcycle accident june 16th...he was in the hospital for a week, broke his shoulder and his ankle and 4 toes. he is home now in a hospital bed...so, i have not been on the computer much.

no income for 3-6 months........gulp

Cut the tenderloin in cubes and make stroganoff out of it!

Make tenderloin sliced and warmed in fruit juice...ors tirfried with zichinni, peppers tomatoes and pineapple tidbits.
Sorry about your DH...hope he is feeling lots better.

You could shred it and make enchiladas... Or you could slice it cold and use it in summer rolls. You know, the kind that you don't fry. Or, you could make egg rolls.
