Happy Birthday Ginger.

And what better way to celebrate your birthday than with a birthday cake make with real whipped cream!

FAMOUS Chocolate Refrigerator Roll


Prep Time: 30 min

Total Time: 4 hr 30 min

Makes: 14 servings, one slice each

Ingredients:

1 tsp. vanilla

1 pt. (2 cups) whipping cream, whipped

1 pkg. (9 oz.) NABISCO FAMOUS Chocolate Wafers

Preparation:

ADD vanilla to whipped cream; stir gently until well blended.

SPREAD 1-1/2 tsp. of the whipped cream mixture onto each wafer.

Stack wafers together, then stand on edge on serving platter to make a log.

Frost with the remaining whipped cream mixture.

REFRIGERATE at least 4 hours or overnight.

Cut dessert diagonally into 14 slices to serve.

Store leftover dessert in refrigerator -------->This was the part that always cracked my family up. There WERE NO left overs.

****as an aside, this was my fatherÂs most favorite cake EVER. He shared his birthday with JFKÂs assassination. He never enjoyed his birthdays after that, but boy did his face light up when he saw this cake.

    Oh, thanks so much. I love that cake & haven't had it in years. After all I ate after work, I'd probably still have room for some.

    (I still feel guilty celebrating on this day after what happened 5 years ago, but thanks.)

    A very happy birthday to you..........

    Parmesan Pan Fried Tomatoes
    1 cup all-purpose flour
    1 tablespoon onion powder
    2 teaspoons granulated garlic
    1 teaspoon salt
    1/2 teaspoon ground black pepper
    1 cup freshly grated Parmesan cheese
    1 cup Panko Japanese breadcrumbs
    12 slices tomatoes, sliced 1/2-inch thick (about 3 tomatoes)
    2 large eggs
    2 tablespoons Dijon mustard
    3 tablespoons olive oil
    Combine flour, onion powder, granulated garlic, salt and pepper. Mix well.
    In separate bowl combine panko and Parmesan.
    In third bowl combine eggs and mustard.
    Take slices of tomato and dip in flour, dust off excess. Then dip in egg mixture, letting excess drip off. Finally dip in parmesan/panko mixture, pressing Parmesan mixture onto slices for good coverage.
    Repeat until all slices are breaded. These should be stored in a single layer dusted lightly with extra crumbs.
    Heat olive oil in non-stick frying pan, over medium-high heat. Place 3 slices in pan, and let cook about 1 1/2 to 2 minutes on each side, until just golden brown. Don't flip too soon or Parmesan mix will fall off. Serve hot.
    Makes 4 servings.

    Hi Ginger! Happy Belated Birthday!

    I just came back last night at about 1:00 A.M. so I missed the big day, actually I was flying on that day. Since you said that you got a ton of whipped cream, it sounds like it was a great birthday and I hope it was a happy one for you.

    You shouldn't feel guilty at all about celebrating on that day. Its life-affirming to celebrate and rejoice in the good things in our lives! If you've been counting backwards the way I have been the last few years, that's plenty of cause to celebrate!

    Thanks to all 3 of you! Woodie, I've counted back so far, I should be starting kindergarten this year but nobody believes me. Thanks again. (Wish I had some of those tomatoes.)
