Dilly Beans

2 pounds trimmed green beans
4 heads dill
4 cloves garlic, bruised
4 small chili peppers, slit
2 1/2 cups vinegar
2 1/2 cups water
1/4 cup canning salt.

Pack beans lengthwise into hot jars, leaving 1/4 inch headspace. To each pint add one chili, 1 garlic clove, and 1 head dill.

Combine remaining ingredients in a saucepan. Bring to a boil. Pour hot liquid over beans, leaving 1/4 inch headsace. Remove air bubles, adjust lids, and process pints and quarts 10 minutes in a boiling water bath.

If you replace the beans with pickling cucumbers, you'll get a nice dill pickle too.
