Need ideas for a bathroom ceiling

I am getting a little frustrated. We are doing a nearly full gut of our downstairs bathroom. We tore out all of the plaster and lathe, put down a new subfloor, put in all new drywall, bought the corner garden tub, toilet, and vanity (double sink), all in white.

Okay, here is the problem. The ceiling in the bathroom is old drywall. It is a few years old and in decent shape, but roughly finished. It is also what is holding in roughly a pick up truckload or two of blow in insulation. That is the main reason we are keeping it in place. If it were in bad shape, it would have come out no matter what. Anyway, I am trying to decide what would be the best thing to put on the ceiling to cover the drywall.We haven't decided what color of paint to do the walls. We are putting in wainscotting around the wall where there are no fixtures. (We are living in a small rustic cottage.) Plus, we got it give to us. The wainscotting, not the house that is. LOL. We are Trying to keep it simple. The room is well ventilated, so I was thinking some tongue and groove boards. Paneling would also be an option, but I am having a creative block.

The question I guess I am asking is what other options are out there for a bathroom ceiling? I don't have pics to post, but if someone insists, I can get them. The problem is that all we have is unfinished drywall and an unfinished tub sitting in the room. Not very inspiring, huh? Oh, and the washer and dryer, of course.
