interfacing - help!

hello there,

i'm fairly new to sewing but have made simple projects like quilts, totes, baby blankets etc.

recently, i used the iron-on (medium) interfacing to make a diaper bag which turned out ok. however it had a stiff crunchy feel. how do i achieve that soft-padded yet able-to-stand-up look like this bag on Etsy http://ny-image3.etsy.com/il_fullxfull.58970923.jpg has? i'm planning to make another diaper bag which is lined on the inside with a different colored fabric.

i'm not familiar with interfacing at all, so please dumb it way down for me :P
