I will have to find my green pina colada recipe, but here's my new addiction.

With the warmer weather, I've been craving iced coffee.

Well here's my healthier version:

- I freeze brewed plain STRONG coffee into ice cubes.

In Vitamix, blend up until spinach is pulverized:

- 1.5 scoop of Optimum Nutrition Mocha Cappuccino

- 3/4cup frozen spinach

- 3 packets of Truvia (I like mine sweet)

- 1/2cup water (or milk/soy/almond)

Then I throw in 3 coffee-cubes, along with about 4-7ice cubes.

Blend until creamy.

Result is a tall cold (brain-freeze) on-the-go meal, including veggie:

- 206calories

- 19g carbs

- 39g protein

Sometimes if I 'm using water, I throw in 1/3 of a ripe creamy avocado to make it creamier.

You can get crazier: add flax seeds, Greek yogurt, etc.

Instead of MochaCap flavor, use plain DoubleChocolate flavor, throw in peanut butter or pb2, and now you have Reese's Peanut Butter Cup.

Yum!

I get the ON in 5# tubs, look for Slickdeals dot net deals

I'm off to blend up unsweetened coconut flakes to turn into coconut butter, to be used in my green pina colada. Tons of fresh pineapple that I stuck in the freeze last night (don't have to use ice cubes).

Healthier yummy "ice cream"

- I didn't even tweak w/ protein powder/etc.

I think you can only make it w/ a Vitamix, due to the tamper. This gets to be wicked stiff/frozen, so most normal blenders would fail/not move anything.

Amanda's yummy ice cream

Vitamix:
- 5 frozen banana
- 2T milk
- 2t vanilla extract
Top w/ chocolate and peanut butter

I don't have a Vitamix, but do the frozen banana ice cream in my old Oster all the time. I usually add a scoop of protein, too :)

Now I need to try that green piña colada!

Amanda's green pina colada recipe:

all these are approximates, I haven't made any in about 2weeks.

--

In Vitamix, blend up until spinach is pulverized/liquidfy/no chunks:

- 1 scoop of Optimum Nutrition "vanilla ice cream"

- 3 Tablespoon frozen spinach

- 1/2cup water (or milk/soy/almond)

- 2 Tablespoon of coconut butter

(can make your own coconut butter by Vitamixing unsweetened coconut flakes until thoroughly smooth/creamy)

---

Add in/blend:

- 1.5cups frozen pineapple chunks (even the pineapple core = more fiber)

- 1-2 packets of Truvia (depending on how sweet your pineapple is)

- 4-7 ice cubes

Blend until creamy.

Sometimes if I 'm using water, I throw in 1/3 of a ripe creamy avocado to make it creamier (don't use banana: it'll overpower the taste of the pineapple/coconut).

Drink slowly, or else suffer the brain-freeze!!!

Enjoy :)

Amanda's Lobstah Arrabbiatta

Using this recipe as starter, then I tweak (because I don't really know how to stick to a recipe.

Will be back to update.
