hood inserts

I have been researching hoods for a while now and I don't know that I am any closer to a decision so I figured I would post here, see what gardenwebbers have to say and then just make the decision and move forward. I am doing a kitchen in new construction so I am not limited by existing framing for ducting. I have pretty much decided on a cabinetry hood and I am looking for an insert to go over my 48" Capital Culiarian rangetop with 6 burners and a griddle. I considered Best/Broan Super Pro 1200 Internal Blower. It is the least expensive but they use 430 SS (don't know if that is even an issue). I am also considering the Prestige Power Pack and they use the higher grade 304 SS. My third option is the Vent A Hood insert. Can't tell what kind of SS they use. The VAH and Presige pricing are similiar. I am doing a 54" hood and all are 1200 CFM. Thanks for your help!
