Please help: kitchen layout

We are in stage 1 of kitchen remodel! We need a totally new layout. Ours stinks. I will try to provide as much info as I can, and if more is needed I will answer! I have included a layout drawn to scale of our kitchen (1 box= 1 foot) as well as a few pictures.
We are a young family with 3 kids. The main problems with our current kitchen are 1) NOT ENOUGH COUNTER SPACE(!) 2) that I don't like having the table in the kitchen (too hard to sweep under) I would rather have a solid eating area - probably an island and 3) the sliding door behind the table is inconvenient for traffic.
Other info that may be helpful, the kitchen is open to the family room, but there is another living room and dining room in the house. Also, we have a concrete slab foundation, so moving the sink would be a big pain.
I *thought* that I had a good idea. I wanted to switch the slider and the window, then put the sink under the new window, extending the cabinets all the way down their existing wall, plus under the new window. I was then going to get rid of the peninsula and put in an island with bar stools for eating. However, I asked a plumber and he said to move the sink would be at least $1000, plus the big kicker is that we just put in new tile floors, and they would have to be torn up to move the pipes. SO, we're back to square 1.
I want: a place for the kids to eat breakfast (either an island, or some sort of breakfast bar under a window), more counter space, and a better pantry. My husband doesn't cook, but my 5 and 3 year old daughters love to be in the kitchen with me. PLEASE HELP!!! :)
