Hi- I probably wouldn't have the overhang go to much beyond the face of the drawer or door fronts.
Most edges if you are using a 3/4 " piece of stone or quartz usually has an edge that is 1 1/2".
I am guessing your fabricator or contractor has to build up the sub deck to accommodate the 2 1/4" edge.
I would also check with your fabricator what he general does with regard to how much the countertop comes out over the base cabinets.
