I like the paint color:-) But I would say two, I think it would help it look more symmetrical.

If you don't want to move the junction boxes I would suggest 1 mirror, however if you are OK with opening the walls then 2 would make sense. Alternatively, pendants over a vanity can be a lot of fun!

You could do 2 of the current size or a much longer one if you want to use just one

For linear logic I suggest one large mirror and switch out the current light fixture for a wider/longer one.

How about mounting the fixture on top of the mirror instead of over the top
