Grey spots on sweet potatoes

So I am curious... Occasionally, when I am peeling sweet potatoes to bake them in olive oil after dicing them up, they get these grey splotchy patches on the surface of the sweet potato pieces. It does not seem to affect the taste or texture, and it is not simply sugars burning or oxidizing. Any ideas on what it is? I should have taken a pic, but I did not.

It's a kind of decay which comes with age, and especially when the roots have been damaged or exposed to too cool temps. Fortunately, for you, it isn't far advanced. At this time of year it's fairly common. I have sweet potatoes developing these kinds of blemishes, but which I am certain they have not been mistreated.
