Hey gardening geniuses.... glad to see most of us made it through the forum switch-a-roo! I've got a project I'm working on in class and thought I'd reach out to those in the know.

So, we have to choose about 5 different "crops" that we'd like to grow for a profit in Colorado. We also have to design the type of greenhouse and heat/cooling systems to use for it to grow said crops. This is all an exercise to help us if we decide to do this as a business in the future or what not.

The main thing to focus on here is minimum temps since it costs so much to heat a greenhouse through winter. Anyone know of plants that grow well with lower min temps? I have to keep them above the temp that would keep them actively growing/producing and not going dormant. I prefer crops with an edible aspect to them, but am open to any ideas. Please chime in if you know of any low temp crops. I thought of kale and spinach, since I know they like it on the cooler side.
