I have two cats and buy their kitty litter in buckets just for this purpose. I put an empty one near the side door with the trash and recycling bins. Of course the Worm Factory in the basement gets the most delectable bits, like coffee grounds and chopped-up banana peels, but we just produce too much garbage for the indoor verd. I put my other kitchen scraps in a quart-sized yogurt container, emptying it daily into into the kitty litter bucket, then layering with shredded paper. (If my neighbors have seen this they've made no comment.) When the bucket is full, I put in the detached garage to await Spring. I hope Spring is coming soon, as the are at least ten of them stacked out there. I tried this for the first time last year, using the contents of the buckets to start a new compost pile. The garbage was anaerobic, but the smell dissipated quickly when covered with the turned unfinished compost from the old pile. This year I'd like to try trenching the garbage directly into the ground, but I imagine the buckets will thaw long before the ground does. Winter is so long, and it inspires much foolishness.

Sounds like both of you are candidates for bokashi, just need a bunch of buckets to carry you until the ground thaws. The cat litter buckets are great, we have purchased a few over the years even though we do not keep cats indoors the litter is good for cleaning up tough spills like oil. I have also seen loads of reports of folks successful in scoring buckets from bakeries and fast food restaurants.
