The purpose of a back splash is to protect the drywall from moisture. Since the coffee pot area isn't a wet zone, it really isn't necessary to tile that area. For the sink and stove area, bring the tile up to the bottom of the cabinets. In my opinion, trying to cut it to fit around the openings won't make enough of a design impact to warrant the additional expense.

Make sure your caulking is solid around the sink, as it looks like the bottom of the window is flush with the counter.

In my opinion, that pass-thru opening behind the range is extremely odd. I would wall it up and tile from countertop to the vent hood. Then do whatever you want on the other side.
