Choosing paint colors in an open Floor Plan

We are building a home in which much of the home is an open floor plan. When you enter, it's open two stories high and you can straight to the upstairs of the house where there are 6 bedrooms sort of "wrapped around" the open two level entry. You can also see the living room and dining area which are open to each other. I am a person that loves color - I feel it's very warming. I live in a country where the style is very modern but my style isn't, nor are my furnishings. I like a lot of wood, antiques, etc. So I want color and I am even using moldings which no one here uses. I have yet to find pictures with open floor plans that show varied colors. I don't want it to look like a circus but I don't want the whole house to be gray or beige or whatever. And I should mention that I have 6 kids and two dogs so superlight wall colors are not ideal with all the smeary fingerprints, etc. (no matter how much I clean them). If you have kids you know the walls going up the staircase are constantly in need of a wipe down. Does anyone have good examples of varied color usage and or photos?
