Light switches?

Our kitchen remodel has begun and our GC says the next set decision I will need to make are where lighting and light switches and outlets will go.

Our kitchen has three doors, the one at the top of the plan above is to the dining room and will be by far the most used entrance to the kitchen. The one at the bottom of the plan is an exterior side door. And the one on the left side of the plan is to the breakfast nook.

Our kitchen lighting will consist of recessed cans, a flush mount fixture in the center of the room, sconces above the sink run and under cabinet lighting in the top right hand corner where there are upper cabinets. (The original built-ins on the left side of the kitchen will not have under cabinet lighting and the space to the right of the range will not have any upper cabinets due to a window.)

I know that I want the ability to turn the sconces on and off independently and that I want them on a dimmer. I anticipate that they will be my most used lighting. I have never had under cabinet lighting before. Do I want it to be switched separately or should it come on and off with the ceiling lighting? Do I want to be able to control all the lights from all the entrances or just have the sconces operable from all entrances?

Thank you for any thoughts!
