Growing Potatoes - First Time

I see on the web that one should dig a hole 10" deep and plant potatoes, and then fill in the hole as they grow.
I also see that one should dig a 2" hole and then mound up with straw.

My soil is clay (right below my new all-purpose potting soil).

Should I try the deep hole method or the straw method?

Also, can I buy organic red potatoes at the grocery store and plant those whole? Or have those been sprayed with a nasty chemical that stops sprouting?
