Help with kitchen lighting

Our kitchen isn't large but the lighting is inadequate. We have a vaulted ceiling and a 3 canister track light. All three lights point in the same direction and it doesn't appear we can change that - and in any case 3 lights are not enough. My husband thinks some kind of dropped lighting would be best, I'm leaning towards a better track light. Any suggestions?

It is personal preference. I greatly dislike track lighting and would remove it ASAP. Could you show the rest of the room so that we can see where other lighting could go?

Didn't have time for a House Beautiful set up but here is a bigger view of the kitchen...you can see that all the cans are facing/lighting only one side...In this photo the next room, dining, is lighted too...

Can't you add cans in the ceiling and undercounter lighting?

I'm not sure about cans in the slanted ceiling; fortunately we do have under counter lighting but overall the space is a bit dim.
