Digging up suckers?

I have some rootstock suckers on my Contender peach tree that I would like to propagate new trees from by grafting. I don't know the variety of the rootstock. They came up this spring and are now 2.5 ft tall. My question is, when should I dig them up to transplant? Should I do it now, in fall after they go dormant, next spring when they are still dormant, or should I graft onto them next spring and dig them up after the grafts take? I am not sure if they have roots of their own yet. But they are about 1.5 ft away from the trunk so they are coming up from roots not the trunk. Thanks for your help.
