We are currently interviewing painters for our new home interior paint. We have purchased our own SW paint. What should we expect?

One of the painters insists we let him prime, then have all trim work installed (before floors), let him final paint and do floors last .... Is this normal order??

Another says he is going to caulk all the trim work ... Is this normal? I assumed caulking was for repairs and "hiding" in remodels .... Not for new construction?

First time home builder :)
We do not have a general contractor.
