Last night I watched a couple/few videos and was totally shocked at the practices being advocated. I am not what one would call "experienced" and yet I cringed just watching. I noticed on one that in a obviously deleted comment she had been called out on her video and she deleted the comment and answered very angrily..who do you think you are..bla blah blah


I feel so bad for people who are actually seeing good information...and can only imagine the risks they are totally unaware that they are taking.

    Excellent point Ruthie. YouTube is not a reliable source for canning how-tos - a point that has been made here often - yet so many folks still insist on using that source. I do more than cringe over some of them and the downright dangerous methods some of them advocate. I've posted comments on several and included the appropriate links to Ball and NCHFP to support my arguments only to find them quickly deleted while the b*it**y replies are left in place.

    Sadly there are at least a couple of canning forums out there that are almost as bad when it comes to preaching the "no-one-has-dies-from-it-yet" approach to canning.

    PBS runs a show called A Chef's Life and I generally like the show a lot. She runs a restaurant and works with local farmers and folks in town and it's neat. But she visited an older woman that was "canning" tomatoes once and it was obviously not right. They dumped hot tomatoes in a jar and put the lid on and turned it upside down until it cooled. No processing. I think there was salt, but I forgot if there was lemon juice. i sincerely hope she didn't try to adopt that practice for food for her restaurant. I'd assume she couldn't can that many anyway and would be buying them fresh or from a distributor. They didn't say anything else about it. Scary.

    Thanks Dave I mentioned in another thread that I have health issues that prevent me from having a garden so I don't have a lot to can but I do like to keep a few canned items on hand. I love beans and peas etc so I always need some jars ready to grab off the shelf. Its harvest time around here so I hope to find a few goodies to buy to put up...I was refreshing my memory on canning dried beans by checking in to Harvest as I hadn't done it in awhile. I only have one jar of white beans left so it's time to get busy. I am doing chemo at the moment and it slows me down but hasn't killed me yet. I am dealing with my fourth cancer since 2002....This one is probably going to get me but I bought a new sewing machine yesterday so how is that for optimism. I have been sewing chemo hats. Today I put fresh cream style corn in the freezer. Chemo tomorrow though so I will be down for a couple of days....just a couple though can't keep an old broad down for long..I figure that at 76 something else might get me before the cancer if I just keep fighting....

    Great attitude Ruthie and that can't help but make a difference. You hang in there, you hear? And keep in touch as your time and energy allow. Be thinking of you.
