The beans are optional in any of the approved chili canning recipes in the BBB or at NCHFP so just leave the beans out. Do you have the Ball canning books? The Ball Complete Book chili recipe has no beans in it. The NCHFP recipe is for pints only and the BCB has for pints and quarts.

Be aware there are many recipes out there for chili that are either for fresh eating only or aren't safe to can.

Thank you, I have the Ball Complete Book and am looking at the chili recipe on page 405, (the book I have) I have ran across this in several recipes that call for canned tomatoes, are they talking about home canned tomatoes that you have canned or can you use the store canned tomatoes, I understand about they would be cooked twice and all that but always wondered as I don't can tomatoes.

You can use either. Aside from the double processing the only issue with store-bought is they have additives and stabilizers added. if that is no issue for you then they are fine to use.
