I think I have tried to make this dang recipe before with failure, so I hope I can save my precious home grown shisito peppers. In The Joy Picking, there is a recipe for a green chile pickle (p. 72-73). Unlike other fermented recipes I make, in this one the veg is not submerged in brine but mixed with salt and left to sit for three weeks (though covered with a brine filled bag). There is not anything different for this recipe in the addenda, so I was just wondering if this recipe sends up any red flags. Should I cover with brine instead? After three week, you add spices and refrigerate.
