Just as choosing hot pack or raw pack is a personal choice so is the processing method - your choice.

The main difference is in processing time - 10 min vs. 25 to 30 mins. Some argue there really is no time-saving with the PC since you have to wait for cool down time too with the PC. So its convenience. If I'm already pressure canning other stuff I use it for the peaches too. If I am already BWB other stuff then I BWB the peaches.

PC uses much less water, PC heats up faster than BWB, there is maybe a little less floating fruit with the PC than with BWB, no boil over as with BWB but there can be more siphoning with the PC if you make a mistake in the processing and cool down.

Only option is for you to try both and see which you prefer.

Do you think softer fruits would hold up better texture-wise in the PC vs BWB due to shorter processing time?

I am glad you commented, Dave. I haven't done side by side comparisons, so I have always wondered if one way was ultimately better than the other! The blackberries I recently canned in my BWB are a 'little' soft, but I expected that. If I get out to pick more, I will PC those to use as a comparison.
