Roasted Red Pepper spread oops

I am making Ball's roasted red pepper spread right now. I accidentally added all the onion and garlic (about 1 cup), instead of the 1/4 cup it requires. To make up for it I add 3/4 cup more (in addition to the 1/2 cup in the recipe) red wine vinegar and 1/4 cup lemon juice. So the acid is 1 cup over what the recipe requires. Am I going to poison anyone if I can this?

So you basically tripled the onion/garlic and acid, right? If it were me..... I'd feel safe with proceeding ahead and canning it up..

Yes! Thank you! I also tripled the acid. So I thought it would be safe. I think I'll label it "Tangy" roasted red pepper spread. LOL! It still tastes good but there's definitely a tangy taste to it.

I appreciate the speedy response! I'm just about to can it!
