Hi all. Last night I was canning some salsa and I couldn't help but wonder about the safety of the recipe. Then I began to also wonder if there is a source to submit found recipes for analysis and/or testing by a trusted source for doing just that. Naturally I came here--I used to post a lot on gardenweb but for some reason my account didn't convert over, hence the post #1 tag to this string. Anyway, I see a lot of people wondering the same thing. This particular recipe is quite simple and does include some citric acid in the form of "juice of 1 lime" (which I translated to 2 tablespoons lime juice). But since the source is a blog I basically stumbled upon, is there a good way to assess its safety? The ingredients are below as well as a link to the blog. Thanks for any and all advice!
