I'm going to go out on a limb here. It's not a large space so maybe something artsy/wow? It depends on your design style and comfort zone, but I think copper penny tiles would look fabulous.

Sorry I think the art pices behind ranges are very dated but that said those pieces are beautiful but I would think about either a great color of glass subway tile or back painted glass and if the quartz runs up the wall remove it first so the tile starts at the counter.

If you like blue, a light colored teal subway in a vertical end to end application with 2 strips of a clear glass mosaic every two or so subways going up would look fabulous. Use a tight application with light grey grout.
