3-4 feet is generally considered best, to leave room for passage of two people and to be able to open dishwashers, stoves, etc.

I've been told one meter is a good option to have between anything, especially if you have things like ovens and dishwashers to open. If you don't have enough space for that with a fixed island, try one on castors that you can move around when you need to.
