I like a mix of rift and quartersawn. Rift sawn has the even look of the lengthwise grain while the quartersawn adds the interest of the rays or flames. I believe that some of the wood sold as quartersawn is actually a mix. Rift sawn is more dimensionally stable than quartersawn

First take a look at the humidity and average temperature in your home. Oak is hard and will expand and shrink and thus bend and eventually tear when exposed to high or low humidities. When your relative humidity is stable all year around (or you make it so) and professionally placed (taking account of the expansion and shrinkage), your oak floor will be just fine.
